We especially stress the prohibition against cows' flesh because according to śāstra the cow is our mother. Thus the Muslims' cow-killing was challenged by Śrī Caitanya Mahāprabhu.
CC Adi 17.154, Purport:

According to Vedic civilization, there are seven mothers, of which the cow is one. Therefore Śrī Caitanya Mahāprabhu challenged the Muslim Kazi, "What kind of religious principle do you follow by killing your father and mother to eat them?" In any civilized human society, no one would dare kill his father and mother for the purpose of eating them. Therefore Śrī Caitanya Mahāprabhu challenged the system of Muslim religion as patricide and matricide. In the Christian religion also, a principal commandment is "Thou shalt not kill." Nevertheless, Christians violate this rule; they are very expert in killing and in opening slaughterhouses. In our Kṛṣṇa consciousness movement, our first provision is that no one should be allowed to eat any kind of flesh. It does not matter whether it is cows' flesh or goats' flesh, but we especially stress the prohibition against cows' flesh because according to śāstra the cow is our mother. Thus the Muslims' cow-killing was challenged by Śrī Caitanya Mahāprabhu.

God consciousness, Kṛṣṇa consciousness, cannot be understood by the animal killer. Vinā paśughnāt. Nivṛtta-tarṣair upagīyamānāt. You'll find those who are animal killers, the so-called Christians and Mohammedans, they cannot understand. They are simply fanatics.
Lecture on BG 2.18 -- London, August 24, 1973:

Prabhupāda: Those who are animal killers, their brain is dull as stone. They cannot understand any thing. Therefore meat-eating should be stopped. In order to revive the finer tissues of the brain to understand subtle things, one must give up meat-eating. Vinā paśughnāt (SB 10.1.4). It is the statement of the King... What is it?

Devotee: Yudhiṣṭhira.

Prabhupāda: Not Yudhiṣṭhira.

Devotee: Parīkṣit, Parīkṣit Mahārāja.

Prabhupāda: Parīkṣit Mahārāja. He said that God consciousness, Kṛṣṇa consciousness, cannot be understood by the animal killer. Vinā paśughnāt (SB 10.1.4). Nivṛtta-tarṣair upagīyamānāt. You'll find those who are animal killers, the so-called Christians and Mohammedans, they cannot understand. They (are) simply fanatics. Cannot understand what is soul, what is God. They have got some theories and they are thinking we are religionists. What is sin, what is pious activities, these things are not understood by them because they are animal killers. It is not possible. Therefore Lord Buddha propagated ahiṁsā. Ahiṁsā. Because he saw the whole human race is going to hell by this animal killing. "Let me stop them so that they may, in future, they may become sober." Sadaya-hṛdaya darśita: Two sides. First of all he was very much compassionate, that poor animals, they are being killed. And another side, he saw "The whole human race is going to hell. So let me do something." Therefore he had to deny the existence of the soul because their brain will not tolerate such things. Therefore he did not say anything about the soul or God. He said that "You stop animal killing."

Muhammadans also, they have got some principle for animal slaughtering. You know, those who have read Koran, the Muhammadan religion allows animal slaughtering once in a year. It is called koravāni. And they can slaughter animals in the mosque.
Lecture on BG 4.6-8 -- New York, July 20, 1966:

Just like Lord Buddha. When did he appear? He appeared... He appeared in India. The condition of his appearance, perhaps you know. I shall still explain. When India was too much busy in animal slaughter. Of course, the Hindus, they, there are Vedic principles, animal slaughtering. They are... Just like in Muhammadans also, they have got some principle for animal slaughtering. You know, those who have read Koran, the Muhammadan religion allows animal slaughtering once in a year. It is called koravāni. And they can slaughter animals in the mosque. Similarly, in the Vedic religion also, the animals are allowed to be slaughtered in some sacrifice. But no religion, either Muhammadan or Hindu... I do not (know) in detail of your Christian religion, but they do not allow animal slaughter in the slaughter house. There are some particular rules and regulations. Anyway, that is a religious details.

But when India was too much addicted for animal slaughtering under the plea of Vedic sacrifice, the Lord Buddha appeared. Why? They misused the Vedic injunctions. They misused the injunctions of the Vedas. So he, he proclaimed, "No, this animal slaughter should be stopped." He did, he did not agree even with the Vedic injunction.

Srimad-Bhagavatam Lectures

In every religion... In Muhammadan religion, there... So if, if this killing process or this drinking process, or this, which a man has got natural, that is excited under the name of religion, then Nārada says, "Then when actually they will be forbidden for higher elevation of life, they'll not accept it. Therefore your description in the śāstras of all these nonsense, jugupsitam, is abominable."

So this sacrifice, this animal killing, that is also forbidding, that... Nārada Muni said that "Why you have bothered your head in that, that way, that you have made this, this is a type of religion?" Jugupsitam: "This is abominable." Jugupsitaṁ dharma-kṛte 'nuśāsataḥ: "You are authority, and if you recommend animal sacrifice, they will take it. They have got already natural tendency, and they will accept it, 'This is the religious process.' And when they will be forbidden by other, saner persons, they'll not care for it. So it is jugupsitam. It is abominable." Jugupsitaṁ dharma-kṛte 'nuśāsataḥ sva-bhāva-raktasya mahān vyatikramaḥ: "It's a great mistake you have done." Yad-vākyato dharma itītaraḥ sthitaḥ: "They'll accept you authority, and they'll be steady in that assertion, in that conviction." And na manyate tasya nivāraṇam: "And if you say..." Our Christ took flesh. And why should we not? We must do it." They say like that. But Christ said that "You should... You shall not kill." So they cannot give any proper explanation why they kill. So people are becoming meat-eaters nowadays. I have... There is no secrecy. Formerly, at least in India, the meat-eaters used to eat meat very secretly. We had seen in our childhood. If somebody will meat-eat, it was not allowed within the house. They, formerly, rich men, they used to keep Muslim servants as the caretaker of the horse or the carriage driver. So in the (horse)(?) stable(?) they would secretly cook some meat, and the so-called Babu, Zamindar, will eat. It was not allowed. And those who are not rich men—poor men, śūdra class—they would go to Kālī-ghāṭa, and get one goat, sacrifice there, and cook there and eat, then come back. Meat-eating was not at all allowed. The higher caste, especially the brāhmaṇas, they would never touch. Still in some provinces, in Maharastra provinces, in Madras... Of course, they are now taking.

So meat-eaters means mleccha. So now that is increasing, meat-eaters. So when wholesale population will be meat-eaters, mleccha, they'll not understand anything about spiritual matter—"Why it is forbidden?" because the meat-eaters, they cannot understand anything about spiritual matter. In any religion, formerly, even the Muhammadans or Hindus or the Jews, they used to kill one animal as sacrifice. There in the Koran, the injunction is that "You should sacrifice one animal in the mosque." The Jews also, they sacrifice animal in the synagogue.

So the, our subject matter was unlawful meat-eaters. So even the śūdras, who are meat-eaters, they're lawful meat-eaters. What is that lawful meat-eating? Lawful meat-eating is... In any religion, formerly, even the Muhammadans or Hindus or the Jews, they used to kill one animal as sacrifice. They used to kill. Not in the slaughterhouse. Even up to date, those who are strictly religious followers... Suppose the Muhammadans. There in the Koran, the injunction is that "You should sacrifice one animal in the mosque." The Jews also, they sacrifice animal in the synagogue. I have read one book, Lord Jesus Christ, when he was a young boy he was very much shocked when he saw that animal-killing is going on in the synagogue. Therefore he differentiated from the Jews and he started his own religion, Christian religion. Is it not a fact? Am I right? Why... He was also a Jew. Why he deviated? Why he deviated from the Jews? Because when he saw in his young age that animals are being killed in the synagogue, he differed, "No, no, this is horrible. This should be stopped." Therefore, his first commandment is "Thou shall not kill." Am I wrong or right? Eh? That was his first impression, that people should stop killing. So who is Christian? Everyone is violating this first commandment, what to speak of other commandments. Everyone. So it is very difficult to find a real Christian. But if you violate the commandments of Christ, then what kind of Christian you are? This is our question. Who will answer this?

So this is the problem. Animal-killing is not within the category of human civilization. When a man becomes civilized, he knows how to produce food. He can till the ground. He can produce food grains. He can produce fruits and flowers and so many things. Even in the animal kingdom, there are different kinds of animals. They do not touch meat-eating even. They do not touch. Every, every animal has to live by destroying or killing another animal. That is nature's law. Jīvo jīvasya jīvanam. Either you eat vegetable or you eat meat, it doesn't matter. Vegetable has also got life. But there is allotment. Just like the cows or other animals, they do not eat meat, they live on grass. Grass has got (also) life, but because they eat grass life, therefore they will eat meat? No. The allotment. Similarly, human being should be also... There is allotment. For human being, God has given us the foodgrains, the fruits and... Patraṁ puṣpaṁ phalaṁ toyaṁ yo me bhaktyā prayacchati (BG 9.26).

Because the Kazi was Mohammedan, Caitanya Mahāprabhu said that "In your religion there is killing of father and mother. What sort of religion this is?"
Govardhana Puja Lecture -- New York, November 4, 1966:

Now, there was some compromising talk with the magistrate, and in that talk the Caitanya Mahāprabhu first questioned. Because he was Mohammedan, Caitanya Mahāprabhu said that "In your religion there is killing of father and mother. What sort of religion this is?" The Kazi replied, "How do you say that we are killing our father and...?" "Yes. You are killing your mother. Cow gives you milk, delivers milk. You drink the milk, and you kill the cow. Therefore you are killing your mother." So the Kazi replied that "In your Vedic literature also, I have seen. There is cow sacrifice." So Caitanya Mahāprabhu replied, "That is not cow sacrifice. That is rejuvenation of cow. Old cows were sacrificed in the fire, and again a new life was given by the Vedic mantra. But because there is lack of such expert brāhmaṇas to chant that mantra, therefore cow sacrifice in this age is forbidden."

So when the things are not practical, that becomes a forbidden. If you actually get the result by some spiritual or religious rituals, performance, then it is very good. Otherwise it is superstition.

Chand Kazi replied that "Cow killing is also not generally recommended in the Koran. Actually, beef-eating or flesh-eating is not in the higher stage. But those who are inclined to take flesh, for them it is recommended that instead of killing many small animals, one big animal should be killed. So actually in Mecca, Medina, they kill camel. That is also in the mosque." So the substance of his speech was that flesh-eating ultimately is not recommended.
Discourse on Lord Caitanya Play Between Srila Prabhupada and Hayagriva -- April 5-6, 1967, San Francisco:

Prabhupāda: Chand Kazi was a... Maulana Chand Kazi. His name is Maulana Chand Kazi. He was a great scholar in the Koran scripture. So Caitanya Mahāprabhu first of all asked the Chand Kazi, "My dear uncle, what is your religion that you are eating your mother and father?" (laughs) So he could understand that He was attacking the cow killing process. So he said, "Well, You are just trying to criticize our cow killing, but in Your Vedic literature also I have seen that cow killing is allowed in sacrifice." Then Lord Caitanya said, "Yes. That is not killing. That is rejuvenating. That is not killing." The sacrifice of cow recommended in the Vedic śāstra means that the brāhmaṇas prove how powerful was Vedic mantra that it could give a new life to the old cows and bulls. So then Caitanya Mahāprabhu said, that "Such kind of learned brāhmaṇas and Vedic yajña is not possible in this age. Therefore cow killing..." Not cow killing. "Sacrifice by offering cow, sacrifice by offering horse, and..." Aśvamedhaṁ gavālambhaṁ (CC Adi 17.164). And sannyāsaṁ pala paitṛkam. Sannyāsa means to become in the renounced order of life. And these five things. One thing is sacrifice by offering cow. Second, sacrifice by offering horse. Third, to accept renounced order of life. And fourth, offering ablutions... Or what is called? Offering some, something to the forefathers? What is called?

Hayagrīva: Oblations.

Prabhupāda: Oblations. Yes. This, and to beget child by the husband's younger brother. Formerly, the society allowed that if a woman is young, she has no child, but husband died, so if the husband has younger brother, through the younger brother she could have a child. This system was current. But Caitanya Mahāprabhu says that these five things are forbidden in this age. So Chand Kazi also replied that "Cow killing is also not generally recommended in the Koran. Actually, beef-eating or flesh-eating is not in the higher stage. But those who are inclined to take flesh, for them it is recommended that instead of killing many small animals, one big animal should be killed. So actually in Mecca, Medina, they kill camel. Chand Kazi could understand that Caitanya is marking on the cow killing by the Mohammedans. Then he said, "Oh, this cow killing is also in your Hindu religion."
Lord Caitanya Play Told to Tamala Krsna -- August 4, 1969, Los Angeles:

Prabhupāda: Then Caitanya Mahāprabhu asked him, "My dear uncle, what is your religion that you are killing father and mother?" "Why killing father and mother?" "Oh, you are killing cow, your mother. You are drinking milk. And oxen, he produces grains for you in the field; so he is your father. The father earns for the children, so he is producing grains. And mother gives milk; so cow is giving milk. So how is your religion that the father mother killing?" Then he could understand that Caitanya is marking on the cow killing by the Mohammedans. Then he said, "Oh, this cow killing is also in your Hindu religion." Then He said, "How is that, Hindu religion cow killing?" "Oh, there is cow sacrifice." Then He said that cow sacrifice is not like this. Cow sacrifice is giving new life to the old cow. That is cow sacrifi... It is not killing. And because at the present moment the brāhmaṇas are not so qualified that they can give new life, therefore that sacrifice is now forbidden. He cited some verses from Vedic literature that cow sacrifice and horse sacrifice and to beget children by the younger brother of husband and sannyāsa, and offering oblations with meat, these things are forbidden. So that is past. This is... Now it has no significance. In this way, both of them were scholars. Then they compromised. Agreement was the Kazi gave order everyone of his descendants, that "Nobody will check this saṅkīrtana movement." So that order is being carried by their descendants still there in Nabadwip.

Even in India during Mohammedan period, there was no slaughterhouse. Individual, if he liked, he can kill one animal and eat. No slaughterhouse.
Room Conversation with Two Buddhist Monks -- July 12, 1973, London:

Prabhupāda: In the forest, there is no slaughterhouse, although they are carnivorous animals.

Buddhist Monk (1): Is the only way.

Prabhupāda: So actually in India the meat-eaters were always, but there was no slaughterhouse. The meat-eaters, they were allowed that "You can sacrifice one goat before the goddess Kālī and eat it." That means once in a month, restriction. And individual person... But no slaughterhouse. What is this nonsense, slaughterhouse? Big, big slaughterhouse. Trade with slaughterhouse. This is the... Even, even in India during Mohammedan period, there was no slaughterhouse. Individual, if he liked, he can kill one animal and eat. No slaughterhouse.

Buddhist Monk (1): No mass slaughters, no mass slaughters.

Prabhupāda: No. This is from the western world. This is very nice argument, that in the jungle there are carnivorous animals, but they don't maintain slaughterhouse. Neither they attack unless they are hungry.

Vedas says that "You can eat meat, but..." Not only Vedas, in other scriptures also. The Jews also say. The Mohammedans also say that you can kill in the synagogue or in the, what is called, mosque, one animal. But not slaughterhouse. No religion prescribes that you open slaughterhouse.
Morning Walk -- December 6, 1973, Los Angeles:

Umāpati: (break) ...I have, I have been reading some of the writings of Bhaktivinoda Ṭhākura, and I have come to an understanding from what I have read that there are, there is, there is a thing called tendency and, and... Well, in other words, the Vedas will teach a man if he is incapable of not killing, of, incapable of not killing, if he's addicted to meat-eating, that there are rules whereby he can eat meat and thereby, under prescribed rules found in the Vedas. And thereby, his pious activity, he can raise to a higher level of understanding. And then there are rules that says, "Thou shalt not eat meat," and therefore one is eligible and must follow those restrictions.

Prabhupāda: Yes. In the beginning...

Umāpati: In the beginning.

Prabhupāda: Just like loke vyavāyāmiṣa-madya-sevā nityā hi jantoḥ. There is tendency for eating meat. Therefore Vedas says that "You can eat meat, but..." Not only Vedas, in other scriptures also. The Jews also say. The Mohammedans also say that you can kill in the synagogue or in the, what is called, mosque, one animal. But not slaughterhouse. No religion prescribes that you open slaughterhouse. No.

Prajāpati: It's always done under...

Prabhupāda: That is restricted. Why it is advised to kill in the synagogue? Why not publicly? That means it is not wanted, but if you go on killing in the mosque, some day you may come to your sense, that you are a rascal; you are becoming responsible. But if you open slaughterhouse, that sense will never come.

Hṛdayānanda: And not to kill the cow?

Prabhupāda: Especially not to kill cow. That animal is very, very important to the human society. According to the Vedic system, those who are meat-eaters, they are recommended to kill some goat or some other animal. Not cow.

All these things are sinful. To drink is sinful. Even among the Muhammadans. To smoke, sinful. They have got austerities. Their animal-killing is once in a year. (Hindi) Only animals should be sacrificed in worship. There are so many things. Every religion there is good thing, but then nobody follows.
Morning Walk -- December 11, 1973, Los Angeles:

Karandhara: There's one Arab leader, he goes to the temple five times a day, he doesn't eat meat, er, doesn't drink liquor or smoke or go out with women...

Prabhupāda: Yes, these are, these are prohibited in Muhammadan villages.

Karandhara: Yes.

Prabhupāda: Yes. But still it is good. To some extent, he's advanced.

Karandhara: He doesn't allow any liquor shops or tobacco shops in this country.

Prabhupāda: Yeah, that's good.

Karandhara: Khadafi.

Prabhupāda: All these things are sinful. To drink is sinful. Even among the Muhammadans. To smoke, sinful. They have got austerities. Their animal-killing is once in a year. (Hindi) Only animals should be sacrificed in worship. There are so many things. Every religion there is good thing, but then nobody follows. Simply defined, "I'm Christian," "I'm Muhammadan," "I am Hindu..." That's all. He's neither of them. He's simply animal. He's simply animal. Just like these rascal Christian. The first proposition is "Thou shalt not kill," and see they're simply killing, and they're claiming "Christians." Just see.

Before British period, even in Mohammedan period, there was no slaughterhouse, neither the public used to take cow's flesh. Still in Mohammedan country, Afghanistan, these places, they do not take cow's flesh. Lamb, goats. In the Vedic culture, the cow is recommended to be protected, not other animals.
Morning Walk -- April 6, 1975, Mayapur:

Puṣṭa Kṛṣṇa: ...animals of any kind? Would a Vedic king try to prohibit the fifth-class men from eating the animals?

Prabhupāda: No. Animals, you can eat if you like. But there was no slaughterhouse. If you like, you can kill your own animal and eat. That was open. But the state did not maintain any slaughterhouse. And the third-class, fourth-class men, they would eat. So simply by saying that "You don't eat," they will not accept that. They're free, but the state would not maintain the slaughterhouse. At the present moment also, if the slaughterhouse are closed, then immediately seventy-five-percent meat-eating will be stopped. They maintain slaughterhouse. That is the most sinful activity.

Pañcadraviḍa: That was Nehru's contribution?

Prabhupāda: Eh?

Pañcadraviḍa: Nehru started that slaughterhouse?

Prabhupāda: No, it is British contribution, the mlecchas. Before British period, even in Mohammedan period, there was no slaughterhouse, neither the public used to take cow's flesh. Still in Mohammedan country, Afghanistan, these places, they do not take cow's flesh. Lamb, goats. In the Vedic culture, the cow is recommended to be protected, not other animals. Other animals, the meat-eaters can eat.

Puṣṭa Kṛṣṇa: Even the buffalo.

Prabhupāda: Eh?

Puṣṭa Kṛṣṇa: Buffalo.

Prabhupāda: Yes, buffalos. Cow is very important animal. Therefore it is recommended to protect it. From social benefit point of view, it is essential that cow should be protected so that you can get lots of milk preparations and keep your health very nice.

When Gandhi was approached that "You have got so much influence on the Mohammedans. Why don't you stop this cow slaughter?" Gandhi said, "No, it is their religion. I cannot stop." That is yata mat, that "Cow slaughter is also good, and cow not slaughter is also good."

Puṣṭa Kṛṣṇa: Prabhupāda, sometimes during your lectures I hear you say yata mat tata mat?

Prabhupāda: Ah, yata mat tata path.

Puṣṭa Kṛṣṇa: What does that mean?

Prabhupāda: That is Vivekananda's philosophy. "Whatever opinion you have got, that is also nice." That means even if we differ, your opinion, my opinion, your is good and my is good. That means no controversy, that's all: making compromise. If I say, "Your, your whatever you think..." This is going on. When Gandhi was approached that "You have got so much influence on the Mohammedans. Why don't you stop this cow slaughter?" Gandhi said, "No, it is their religion. I cannot stop." The Kazi was challenged by Caitanya Mahāprabhu that "You are killing cow and bulls. What is your religion? You are killing your father and mother." Then, he also was learned man, he said it that "In your Vedas the cow sacrifice yajña is there." Then He explained, "This sacrifice is not for eating. It is giving a new life. To test the Vedic mantra."

Dr. Pore: Are you saying that you should never kill a cow but that you sometimes can kill a person?

Prabhupāda: When you can give life. There is sometimes cow sacrifice yajña. The cow sacrifice yajña means an old cow, he is sacrificed in the fire, and by Vedic hymns he is given again new life. To test the potency of the Vedic mantra, an old cow is sacrificed and by mantra he is given again new life. Not for killing and eating. That was discussed between Caitanya Mahāprabhu and Chand Kazi, Mohammedan magistrate. Those who have read Caitanya-caritāmṛta will find. So the Kazi was challenged by Caitanya Mahāprabhu that "You are killing cow and bulls. What is your religion? You are killing your father and mother." To test the Vedic mantra." That is discussed in Caitanya-caritāmṛta. That is a different case. For meat-eating a cow should not be killed. This is not very good civilization.

You cannot open slaughterhouse giving reference to the Vedas, or any sacrifice either. The Jews, and everyone, the Muhammadans, they also make sacrifice. One day in the year they sacrifice. It's not that they recommend open a slaughterhouse.
Evening Darsana -- July 11, 1976, New York:

Dhṛṣṭadyumna: "The animal sacrifice as stated in the Vedas is different from the unrestricted animal killing in the slaughterhouse. Because the asuras or the so-called scholars of Vedic literatures put forward the evidence of animal killing in the Vedas, Lord Buddha superficially denied the authority of the Vedas. This rejection of the Vedas by Lord Buddha was adopted..."

Prabhupāda: Just like, you said that in the Vedas there is animal killing, therefore... (break) That was not killing. So, instead of wasting his time he said "I don't care for your Vedas. It is my order that you stop if you love me." You cannot open slaughterhouse giving reference to the Vedas, or any sacrifice either. The Jews, and everyone, the Muhammadans, they also make sacrifice. One day in the year they sacrifice. It's not that they recommend open a slaughterhouse. This is all nonsense, rākṣasa. That sacrifice also recommended in this sense, that you cannot stop animal killing, there will be a class of men who will eat meat—to give them some concession. So this is recommended, "All right, if you want to eat meat, you sacrifice." Amongst the Hindus, just like Kālī-pūjā, Durgā-pūjā, the animal eaters, they are given this concession, that "If you want to eat meat, you just worship Goddess Kālī," and this goddess Kālī-worshiping is recommended on the amāvasyā, the dark moon night, one day in a month, at the dead of night. So if one goes on eating meat in this way, one day in a month and dead of night, then he'll automatically give it up. "So much botheration, better give it up." Actually deny. "Yes, you can eat once in a month at the dead of night, when everyone will sleep, nobody can hear the screaming of the animal..." These are the recommendations. That is indirectly denying. If one is intelligent, he'll accept it, "Why so much botheration for eating meat? Better give it up."

Room Conversation -- January 30, 1977, Bhuvanesvara:

Prabhupāda: The Muslims, they are not atheists.

Pṛthu-putra: No. They follow the Koran.

Prabhupāda: Oh, yes.

Pṛthu-putra: They follow very strictly the laws of Koran. Even their whole social structure is based on Koran.

Prabhupāda: That is here in India also.

Pṛthu-putra: But they are also killing the animals.

Prabhupāda: Their Koran, their Koran... Oh, that is... What can we do? They are habituated. In Arabia where is food?

Pṛthu-putra: Yes. Very desert most of the time.

Prabhupāda: Yes. So therefore they're allowed. Question is, jīvo jīvasya jīvanam: "One living entity..."

Pṛthu-putra: "...is the food of another."

Prabhupāda: Another. So when you have got less important life, why should we kill more important? Just like Kṛṣṇa says, kṛṣi-go-rakṣya, protecting the cows. That is a very important animal. He doesn't say goat-rakṣya or lamb-rakṣya. Those who want to eat meat, they can eat some unimportant animal, but don't touch cow. It is very important.

Pṛthu-putra: They mostly eat goats, chicken.

Prabhupāda: Therefore, in India, cow flesh is strictly forbidden. But it doesn't mean that they are vegetarian. They eat fish and goat, lamb, sometimes buffalo. But not to touch the cow. From economic point of view, from vitamin point of view, cow should be given... Just like from the milk of cow we can prepare so many nice things. Kṛṣi-go-rakṣya-vāṇijyaṁ vaiśya-karma svabhāva-jam (BG 18.44).

You had said that Gandhi, he was supposed to be mahātmā, but after he won victory, independence, by his activities, then they said, "Now you can stop meat-eating. You can stop cow slaughter throughout India." He says, "No, no. How can we do this? The Muhammadans, the Muslims, they are eating meat."
Evening Darsana -- February 26, 1977, Mayapura:

Prabhupāda: In India at least those who are not very educated, mass of people, they believe transmigration of the soul. They very easily believe it because culture is based on that, pūrva-janma paro janma. They believe that "If I act sinfully, then I'll have to suffer next life, and because I did not do properly, therefore I am suffering in this life." Still they believe. But the so-called educated people, they are trying to set aside this. They say, "Superstition." And the leaders say that "India, giving more stress on the soul, not on the body, India's position is so degraded." This is the leaders' opinion. Big, big leaders, they think. Therefore the so-called leaders or learned scholars, they write notes on Bhagavad-gītā, but they never give any idea of spiritual life. They utilize Bhagavad-gītā for material end. This is going on. Just like our big leader, Gandhi. He was supposed to be very strict follower of Bhagavad-gītā, and he has never instructed about spiritual life.

Nārāyaṇa: Satsvarūpa Mahārāja was telling a story on the way back from the Ganges that you had said that Gandhi, he was supposed to be mahātmā, but after he won victory, independence, by his activities, then they said, "Now you can stop meat-eating. You can stop cow slaughter throughout India." He says, "No, no. How can we do this? The Muhammadans, the Muslims, they are eating meat."

Prabhupāda: Yes.
