Brahminical culture can advance only when man is educated to develop the quality of goodness, and for this there is a prime necessity of food prepared with milk, fruits and grains. Mahārāja Parīkṣit was astonished to see that a black śūdra, dressed like a ruler, was mistreating a cow, the most important animal in human society.
SB 1.16.4, Purport:

Mahārāja Parīkṣit went out to conquer the world after his ascendance to the throne, but this was not for the purpose of aggression on other states. He was the Emperor of the world, and all small states were already under his regime. His purpose in going out was to see how things were going on in terms of the godly state. The king, being the representative of the Lord, has to execute the will of the Lord duly. There is no question of self-aggrandizement. Thus as soon as Mahārāja Parīkṣit saw that a lower-class man in the dress of a king was hurting the legs of a cow and a bull, at once he arrested and punished him. The king cannot tolerate insults to the most important animal, the cow, nor can he tolerate disrespect for the most important man, the brāhmaṇa. Human civilization means to advance the cause of brahminical culture, and to maintain it, cow protection is essential. There is a miracle in milk, for it contains all the necessary vitamins to sustain human physiological conditions for higher achievements. Brahminical culture can advance only when man is educated to develop the quality of goodness, and for this there is a prime necessity of food prepared with milk, fruits and grains. The bull helps production of grains in the agricultural field, and the cow delivers milk, the miracle of aggregate food values. The human society, therefore, maintains these two important animals very carefully so that they can wander everywhere in cheerfulness.
SB 1.16.18, Purport:

The bull is the emblem of the moral principle, and the cow is the representative of the earth. When the bull and the cow are in a joyful mood, it is to be understood that the people of the world are also in a joyful mood. The reason is that the bull helps production of grains in the agricultural field, and the cow delivers milk, the miracle of aggregate food values. The human society, therefore, maintains these two important animals very carefully so that they can wander everywhere in cheerfulness. But at the present moment in this age of Kali both the bull and the cow are now being slaughtered and eaten up as foodstuff by a class of men who do not know the brahminical culture. The bull and the cow can be protected for the good of all human society simply by the spreading of brahminical culture as the topmost perfection of all cultural affairs. By advancement of such culture, the morale of society is properly maintained, and so peace and prosperity are also attained without extraneous effort. When brahminical culture deteriorates, the cow and bull are mistreated, and the resultant actions are prominent by the following symptoms.

The human society should recognize the importance of the cow and the bull and thus give all protection to these important animals, following in the footsteps of Mahārāja Parīkṣit.
SB 1.17.9, Purport:

Protection of bulls and cows and all other animals can be possible only when there is a state ruled by an executive head like Mahārāja Parīkṣit. Mahārāja Parīkṣit addresses the cow as mother, for he is a cultured, twice-born, kṣatriya king. Surabhi is the name of the cows which exist in the spiritual planets and are especially reared by Lord Śrī Kṛṣṇa Himself. As men are made after the form and features of the Supreme Lord, so also the cows are made after the form and features of the surabhi cows in the spiritual kingdom. In the material world the human society gives all protection to the human being, but there is no law to protect the descendants of Surabhi, who can give all protection to men by supplying the miracle food, milk. But Mahārāja Parīkṣit and the Pāṇḍavas were fully conscious of the importance of the cow and bull, and they were prepared to punish the cow-killer with all chastisement, including death. There has sometimes been agitation for the protection of the cow, but for want of pious executive heads and suitable laws, the cow and the bull are not given protection. The human society should recognize the importance of the cow and the bull and thus give all protection to these important animals, following in the footsteps of Mahārāja Parīkṣit. For protecting the cows and brahminical culture, the Lord, who is very kind to the cow and the brāhmaṇas (go-brāhmaṇa-hitāya), will be pleased with us and will bestow upon us real peace.

The cow is the most important animal for developing the human body to perfection.
SB 3.5.7, Purport:

The cow is the most important animal for developing the human body to perfection. The body can be maintained by any kind of foodstuff, but cow's milk is particularly essential for developing the finer tissues of the human brain so that one can understand the intricacies of transcendental knowledge. A civilized man is expected to live on foodstuffs comprising fruits, vegetables, grains, sugar and milk. The bull helps in the agricultural process of producing grain, etc., and thus in one sense the bull is the father of humankind, whereas the cow is the mother, for she supplies milk to human society. A civilized man is therefore expected to give all protection to the bulls and cows.

Cows are the most important animal because they produce the miracle food, milk, from which we can prepare ghee and yogurt.
CC Madhya 4.93, Purport:

Anna, ghṛta, dadhi and dugdha are food grains, ghee, yogurt and milk. Actually these are the basis of all food. Vegetables and fruits are subsidiary. Hundreds and thousands of preparations can be made out of grains, vegetables, ghee, milk and yogurt. The food offered to Gopāla in the Annakūṭa ceremony contained only these five ingredients. Only demoniac people are attracted to other types of food, which we will not even mention in this connection. We should understand that in order to prepare nutritious food, we require only grains, ghee, yogurt and milk. We cannot offer anything else to the Deity. The Vaiṣṇava, the perfect human being, does not accept anything not offered to the Deity. People are often frustrated with national food policies, but from the Vedic scriptures we find that if there are sufficient cows and grains, the entire food problem is solved. The vaiśyas (people engaged in agriculture and commerce) are therefore recommended in the Bhagavad-gītā to produce grains and give protection to cows. Cows are the most important animal because they produce the miracle food, milk, from which we can prepare ghee and yogurt.

If we really want to cultivate the human spirit in society we must have first-class intelligent men to guide the society, and to develop the finer tissues of our brains we must assimilate vitamin values from milk. Devotees worship Lord Śrī Kṛṣṇa by addressing Him as the well-wisher of the brāhmaṇas and the cows. The most intelligent class of men, who have perfectly attained knowledge in spiritual values, are called the brāhmaṇas. No society can improve in transcendental knowledge without the guidance of such first-class men, and no brain can assimilate the subtle form of knowledge without fine brain tissues. For such important brain tissues we require a sufficient quantity of milk and milk preparations. Ultimately, we need to protect the cow to derive the highest benefit from this important animal. The cow is very, very important animal. If you want to advance your spiritual consciousness, then you must have sufficient milk and sufficient grains. That is civilization.
Lecture on BG 2.1-11 -- Johannesburg, October 17, 1975:

One who is advanced in knowledge, in civilization, they are called ārya, Aryan civilization. So in the Aryan civilization there are four divisions to maintain the society in the correct balance. That is also stated in the Bhagavad-gītā. Cātur-varṇyaṁ mayā sṛṣṭaṁ guṇa-karma-vibhāgaśaḥ (BG 4.13). The society must be divided into four classes of men. The first-class means most intelligent class of men. They should be trained up as brāhmaṇa. Śamo damaḥ satyaṁ śaucaṁ titikṣā ārjavaṁ jñānaṁ vijñānam āstikyaṁ brahma-karma svabhāva-jam (BG 18.42). So this is the beginning of civilization, not that all śūdras as it is now in this age. Kalau śūdra-sambhavaḥ. Kali-yuga, there is no training how to qualify a section of person to become first-class brāhmaṇa. That training is not there, neither kṣatriya, neither pure vaiśya class. We are proud of our business, vaiśya, but vaiśya means kṛṣi-go-rakṣya-vāṇijyaṁ vaiśya-karma svabhāva-jam (BG 18.44). Vaiśya means they should take care of the cows, cow protection, go-rakṣya. Why go-rakṣya? Why not other animal rakṣya? Kṛṣṇa has not said "animal rakṣya" or "janawal-(?) rakṣya." Go-rakṣya. The cow is very, very important animal. If you want to advance your spiritual consciousness, then you must have sufficient milk and sufficient grains. That is civilization. Therefore it is the duty of the vaiśyas to produce food grain. Annād bhavanti bhūtāni (BG 3.14). Annād. In the society, if you have got sufficient anna, both the animals and the man, they will be happy. These are the instruction in the Bhagavad-gītā, everything practical. If we follow Bhagavad-gītā from all angles of vision—social, political, economical, religious, cultural—you will be perfect. This is Bhagavad-gītā. We are therefore taken up this mission, to preach Bhagavad-gītā as it is to solve all the problems of the world. That is Aryan civilization. Aryan civilization means following the principles of Bhagavad-gītā.

Here it is said go-rakṣya. You should give all protection to this important animal. Kṛṣṇa does not say that you should protect the pigs and hogs or other animals. He especially meant the cows because cow is very important animal to the human society.

The third-class means kṛṣi-go-rakṣya-vāṇijyaṁ vaiśya-karma svabhāva-jam (BG 18.44). Third-class means mercantile traders. They should produce food, enough kṛṣi, agricultural products, and go-rakṣya. Now we see instead of go-rakṣya... Go-rakṣya means protection to the cows. Instead of protection to the cows, they are killing the cows. How you can have perfect society? Cows must be protected. It is so important animal. It is giving the you nectarean food milk, and from milk, you can save your children, you can save your diseased persons. And how it is that you take the cow's milk and send it for slaughterhouse. Oh, this is not, not at all human civilization. Here it is said go-rakṣya. You should give all protection to this important animal. Kṛṣṇa does not say that you should protect the pigs and hogs or other animals. He especially meant the cows because cow is very important animal to the human society. If there are meat-eaters, they can kill other animals, but they should not kill the cow. This is, if you want actually perfect society. Kṛṣi-go-rakṣya-vāṇijyam (BG 18.44). And these persons, they let them produce enough food grains, and where there is no, there is scarcity of food grain, let them supply there. That is called trade. Vāṇijyam. Vāṇijyam.

As nowadays ordinary persons meet together to find out the ways and means for people's prosperity, formerly the great saintly persons, sages, brāhmaṇas, they used to meet, and they used to give formula to the people, to the king, that "You follow this. You will be happy." This was the system, brāhmaṇa, kṣatriya, vaiśya, śūdra. So the brāhmaṇas will give the direction, and the kṣatriya king would execute it. And the vaiśyas will produce foodgrains. Vaiśya-karma svabhāva-jam. Kṛṣi-go-rakṣya-vāṇijyaṁ vaiśya-karma svabhāva-jam (BG 18.44). For vaiśyas, three work, three kinds of occupation: first of all, agriculture, produce food, and then, give protection to the cows. Because cow is important animal, cow protection is very necessary. So kṛṣi-go-rakṣya-vāṇijyam (BG 18.44). And where there is scarcity of food, transport food there, make business. These three things for the vaiśyas.

Those who are meat eaters, they have been recommended to eat the flesh of goats or other lower animals—sometimes dogs also, they eat, or the hogs—you can eat. But never the flesh of cows. So, innocent animal, the most important animal, giving service even after death... While living, giving service, so important service, giving you milk, even after death she is giving service by supplying the skin, the hoof, the horn.

Now, go-dvija-surārti-harāvatāra (SB 1.8.43). Surārti, go. This demonic world is the greatest enemy of cows. Just see how they are maintaining hundreds and thousands of slaughterhouse. Hundreds and thousands of slaughterhouse. Innocent animals, giving you milk, the most important foodstuff. Even after death, it is giving you its skin for your shoes, and you are so rascal that you are killing. And you want to be happy in this world. You see? How sinful they are! They have no consideration that this animal... Why cow protection is so much advocated? Because it is very, very important. Therefore... There is no such injunction that "You don't eat the flesh of the tiger." You can eat. Because those who are meat eaters, those who are meat eaters, they have been recommended to eat the flesh of goats or other lower animals—sometimes dogs also, they eat, or the hogs—you can eat. But never the flesh of cows. So, innocent animal, the most important animal, giving service even after death... If you are at all meat-eater, you can eat pigs, goats, but don't eat cows' flesh. That is very sinful. Why it is sinful? Because it's a very, very important animal in the human society, very important animal.

According to Vedic civilization, the pig-eater, even cow flesh eater is given better position. But the pig-eaters, they are the lowest, śvapacas, untouchable. They are called untouchable. Any meat-eater is untouchable, but especially the pig-eater, śvapaca. In India still, no even meat-eaters... Generally those who are meat-eaters, they take meat of such animals like goats, lambs, like that, those who are meat-eaters. And they never take cow's flesh because cow is protected, go-raksya. So in the Bhagavad-gītā to the meat-eaters also it is said, kṛṣi go-rakṣya vāṇijyam (BG 18.44). Even if you are meat-eater, don't eat cow. You can eat others animals. But don't eat... "We are śvapacas," śvapaca is there. So if you are at all meat-eater, you can eat pigs, goats, but don't eat cows' flesh. That is very sinful. Why it is sinful? Because it's a very, very important animal in the human society, very important animal. You get milk and milk products. Then your brain becomes very nice, memory sharpened. That is, therefore, important. Don't eat. It is economically.

For example, in the Vedic culture, we are learning that a man is considered to be wealthy if he simply has a small patch of land and a cow and God consciousness. Because his God consciousness will lead him to be satisfied by growing his own foods, taking milk from the cow. This is wealth, according to Vedic standards.

Prabhupāda: Therefore cow is specially recommended, go-rakṣya, because very important animal to the society. If those who are meat-eaters, they can eat the hogs and dogs, they can eat. The Vedic injunction is not prohibiting them. If you actually... Actually, a human being does not require to eat meat. He has got many other substitutes. But still, if he wants to eat, let him eat the less important animals. Just like dog, hog. From the social point of view it has no utility. But why killing cows? It is delivering such a nice nutritious food, milk. Not only milk. According to Vedic system, the cow is so important, even the urine, even the stool, of cow is important.

The milk is nothing but blood, transformation of blood. So we take the blood by killing the animal, but we do not wish to kill such an important animal, but they take the blood in form of milk and make preparation. And those who are flesh-eaters, let them wait for the death of the cow. Then let them eat the flesh, not living condition.

Prabhupāda: So our recommendation is, "Don't kill cow." Take milk and make thousands of preparations, all nutritious and very healthy. They do not know how to use cow. Instead of killing, if we take, let the animal live and give us milk, and from the milk, we make hundreds of preparations. The milk is nothing but blood, transformation of blood. So we take the blood by killing the animal, but we do not wish to kill such an important animal, but they take the blood in form of milk and make preparation. And those who are flesh-eaters, let them wait for the death of the cow. Then let them eat the flesh, not living condition. As you are one of the leading citizens of Paris, we appeal to you to take up this consideration seriously. Why we should maintain slaughterhouse? If we want to eat the flesh, let us wait till the death. And there will be death. There is no doubt about it. So why they should maintain slaughterhouse? And this is most cruelty. A animal which is giving milk, so important foodstuff, and that is being killed, it does not suit any moral sense of any human being.

Yes. Those who are meat-eaters, they can eat other non-important animals, but cows must be saved, even from economic point of view.

Prabhupāda: From milk you can prepare hundreds and thousands of preparations.

Dr. Harrap: Oh, yes. Yes. Even in cheeses there are probably hundreds of varieties.

Prabhupāda: Yes, yes. We make. We actually make. At least ten, twenty kinds of sweet preparation we make from the cheese. Therefore our, as recommended in the Bhagavad-gītā, kṛṣi-go-rakṣya-vāṇijyam (BG 18.44). Kṛṣi-go-rakṣya. People... A class of men should be trained up for agriculture, producing food grain, and cow protection. Cow protection means you get the milk, sufficient quantity, and from milk you get so many nutritious, full of vitamin food.

Dr. Harrap: It's a complete food in itself.

Prabhupāda: Yes. Those who are meat-eaters, they can eat other non-important animals, but cows must be saved, even from economic point of view. Here it is said that go-rakṣya. It does not say, Kṛṣṇa, "elephant-rakṣya." Elephant is a big animal, and at least fifty times more than cow, there is flesh. But it is not recommended. But the cow protection is recommended because it has got the miracle food, milk, and from milk you can prepare hundreds of preparation, all nutritious, full of vitamin A and D. So therefore it is recommended, go-rakṣya. It is not that meat-eating is stopped. Meat-eaters may kill other non-important animals but don't kill animal, er, cow. And besides that, from moral point of view, we are drinking milk from the cow, so she is mother.

Prabhupāda: So cow is very important animal. So from religious point of view, or from economic point of view, cows are not allowed, in the Vedic civilization, to be killed. The meat-eaters, they are everywhere, all over the world, but in India meat-eating is allowed—the fifth class, fifth grade community, they eat these cows when it is dead. And the śūdra class, they also eat meat restrictively, goats. That is only under certain restriction, means sacrifice. The goat is sacrificed in the Goddess Kali's temple, and they eat. This is very dangerous, this sacrifice. It is very dangerous. It creates all sinful men. In the Christian religion also, it is said, "Thou shall not kill," and they are killing. So what kind of Christians they are?

Cow is very important animal. Therefore it is recommended to protect it. From social benefit point of view, it is essential that cow should be protected so that you can get lots of milk preparations and keep your health very nice.

Pañcadraviḍa: Nehru started that slaughterhouse?

Prabhupāda: No, it is British contribution, the mlecchas. Before British period, even in Mohammedan period, there was no slaughterhouse, neither the public used to take cow's flesh. Still in Mohammedan country, Afghanistan, these places, they do not take cow's flesh. Lamb, goats. In the Vedic culture, the cow is recommended to be protected, not other animals. Other animals, the meat-eaters can eat.

Puṣṭa Kṛṣṇa: Even the buffalo.

Prabhupāda: Eh?

Puṣṭa Kṛṣṇa: Buffalo.

Prabhupāda: Yes, buffalos. Cow is very important animal. Therefore it is recommended to protect it. From social benefit point of view, it is essential that cow should be protected so that you can get lots of milk preparations and keep your health very nice. So many nice preparations can be made from milk. In New Vrindaban, the other farmers, they come. They are surprised to see: "Oh, so many nice preparations!" They are appreciating. They do not know. It is the industrialist who has introduced this meat-eating. Because they are attracting men from village to work in the factory, so they have made it a policy that "We shall eat cow's flesh. That's all. We don't require..." In Russia, practically, they eat only cow's flesh. They do not know anything else to eat.

Jagadīśa: Śrīla Prabhupāda, in your books you've stated that the position of the cow is as important as the position of the brāhmaṇa.

Prabhupāda: Hm ? Yes. Go-brāhmaṇa-hitāya ca. We offer respect to Kṛṣṇa as the well-wisher of the cows and the brāhmaṇas. Brahminical culture and preparation from milk makes a man perfect for spiritual understanding. Therefore they are two very important items, go-brāhmaṇa hitāya ca. In the society, if there is no brahminical culture and no cow protection, that is animal society. That is not human society. We are trying to bring the animal society to human society to fulfill the mission of human life. This is Kṛṣṇa consciousness.

Why the state hangs a man when he kills a man? The man can plead that "So many animals are being killed every day. If I kill one man, what is the wrong there?" The punishment is that "You have killed one important animal." Therefore the Bhaga..., kṛṣi-go-rakṣya, that cow should be protected because it is a very, very, important animal.

Bahulāśva: Sometimes they argue that we're killing the vegetables.

Prabhupāda: That's all right. Vegetable has also life but we are not killing. When you pluck out the flower, the tree is not killed. When you take a fruit, the tree is not killed. When you take grains, automatically they die. Then you take the grains. There is no question of killing. But even it is killing, it is not as murderous as killing a cow. Why the state hangs a man when he kills a man? The man can plead that "So many animals are being killed every day. If I kill one man, what is the wrong there?" The punishment is that "You have killed one important animal." Therefore the Bhaga..., kṛṣi-go-rakṣya, that cow should be protected because it is a very, very, important animal. It does not say, "Other animal." Or does not say, "All animals." He said, "Cows," because important. It's supplying you milk, so important food. She is your mother and you are killing mother? Is that your civilization? Killing mother? "Mother is old, and mother is no more supplying milk. Kill." Is there any such sanction? Rather, old mother is given more protection. And what is this civilization, killing the mother? In the morning we require milk immediately, and the mother cow is supplying. And when she cannot supply, kill her. What is this philosophy?

Cow is very important animal. You get from its milk so many nutritious food. So apart from religious sentiment, from economic point of view, cow-killing is not good. And from moral point of view it is not good because you drink cow's milk, so cow is your mother.

Prabhupāda: Those who are demons, those who are disturbing elements, they should be killed. And those who are honest and peaceful, they should be maintained. But because it is material world, the world of duality, there are good and evil, so you have to curb down the evil. Sometimes force is required. So that killing is not bad. When the enemy is aggressive and you are killing, that killing and poor animal who is supplying milk... You are drinking milk, your mother, and you are killing. This killing and that killing is not the same thing. According to Vedic civilization the cow is to be given special protection. Why it is recommended for the cow? It does not say of other animal. When animal killing is required according to Vedic civilization, those who are meat-eaters, they are allowed to kill some insignificant animal like deer, goat, pigs. It is for the animal eaters, not for all. But if one is bent upon... And there are persons, they want meat-eating. So for them these unimportant animals are recommended. But cow is very important animal. You get from its milk so many nutritious food. So apart from religious sentiment, from economic point of view, cow-killing is not good. And from moral point of view it is not good because you drink cow's milk, so cow is your mother.

As the second-class man, the administrator, he gives protection to the human being from danger, similarly, the third-class man is entrusted to give protection to the cows. Cow is very important animal in the society because it is supplying milk, the most nutritious food.

Prabhupāda: Cow, yes.

Reporter (2): The cow?

Prabhupāda: Yes, cow, from where you get milk, that cow. So the exact word is used in Sanskrit, kṛṣi-go-rakṣya-vāṇijyaṁ vaiśya-karma svabhāva-jam (BG 18.44). Vaiśya, the third-class man, is called vaiśya. So his duty is how to produce food, food grains, for both for the animals and the man. And he gives protection to the cows. As the second-class man, the administrator, he gives protection to the human being from danger, similarly, the third-class man is entrusted to give protection to the cows. Puṣṭa Kṛṣṇa: For making, you know, the wool, woolen garments like the cap and cādara... Sometimes it's made out of wool. They would get from sheep?

Prabhupāda: Yes. No, the meat-eaters cannot be stopped. They will eat meat. So they can kill the small animals, unimportant, not cow. Kṛṣṇa says, go-rakṣya. He never said lamb-rakṣya or hog-rakṣya. Prabhupāda: Yes. Give protection to the cow, the source of milk.

The cow is especially meant for the human beings. They can utilize in so many ways, and they should give protection, such an important animal. This is human being.

Prabhupāda: Everything should be utilized. Instead of drinking water, you can drink whey. It is very good for digesting. Whey, put little salt and black pepper, it is good digestant. You can avoid water, drink whey. You can use it for cāpāṭi.

Puṣṭa Kṛṣṇa: Making dough?

Prabhupāda: Cāpāṭi, just like you dip the cāpāṭi, dāl, you can dip whey. You can save dāl preparing expenditure. Nothing of milk product can be wasted. You should learn it.

Hari-śauri: Yes. That's what I thought, that's why I was asking.

Prabhupāda: Up to the last drop, it can be utilized.

Prabhupāda: So anyone's question about this, this misdirected civilization? In India there was no such misguided civilization. Actually there is no progress. We are condemned. Why they should waste so much energy not for progress. Before British period, India, there were cities, but not like this because their energy was utilized. Cities were constructed especially in pilgrimages, like Mathurā. Mathurā is very old city, but that is a pilgrimage. Dvārakā, that is also very old city. First of all there was no need of big, big cities because there was no industry. They did not know what is industry. And there were ample food-food grains, milk, vegetables. Those who were eating meat, they were eating small, nonimportant animals like goats, hogs, and they never touched cows. Cows are very important animals. Even the stool, urine, is important. Dr. Patel: And From cows' dung we have produced penicillin in Calcutta (indistinct).

Prabhupāda: That may be, but why penicillin is required?

Dr. Patel: No, but that means it had some value right from beginning. Our forefathers must have known it. Why they did not...

Prabhupāda: No, no, we are speaking... We are speaking... Because it is important, therefore Kṛṣṇa said, kṛṣi-go-rakṣya. Why go-rakṣya required, you do not require any explanation. Prabhupāda: The philosophy is that jīvo jīvasya jīvanam. That doesn't not mean I can eat my son. There is discrimination. So here is an important animal, cow, who gives us milk. We drink milk. So it's not good. But if there is no other way—you have to starve—then what can be done?

Pṛthu-putra: For example, for that boy who is chanting now in Egypt, he has his beads, but his chanting is effective even though he's still eating meat sometimes with his family? Or...

Prabhupāda: So let him chant. Gradually he'll get...
